Whoopie! The BEST Whoopie Pies You'll ever Taste...

Here's the recipe you'll want to NEVER WANT TO lose!

I have always had a sweet tooth.. So does my whole entire family to be fair.. Actually, I blame it on my Mama who has always been the BEST baker! When I stumbled upon this recipe from a friend, I have made these mouth watering Whoopie Pies many, many times and they are ALWAYS a hit with family and friends! It's like a soft cake, cookie sandwich pie! :) My mouth is literally salivating right now just thinking about them. As a bonus, they really are super easy to make and you may just gain new friends by bringing these to share at a gathering or having them as a dessert at your home! They are also a BIG hit with the kids (for obvious reasons) but maybe cut their's in half to not have a super sugar overloaded child on your hands! Just a tip..

Here's the recipe you'll want to NEVER lose!

1 18.25oz. package of dark chocolate cake mix (Like Devil's Food Cake)

1 18.25oz. package of a regular chocolate cake mix

4 eggs

2/3 cup vegetable oil (I haven't tried substitutions yet)

1 8oz. package of softened cream cheese

2 cups confectioners sugar

* You can always double to make more!

For the cake cookies:

Preheat your oven to 325 degrees. Lightly grease a cookie sheet or use a Silpat mat to cover your cookie sheet to prevent sticking. In a medium bowl, stir together the two cake mixes. Add the oil & eggs and mix until it's well blended. Roll the dough into 2" balls and place on the cookie sheet. Flatten the balls slightly with the back of a spoon. Bake for 10-12 minutes in the preheated oven until firm. Let cool on a baking sheet for a few minutes before removing to cool on wire racks.

Here's how they should look when they are about done!

For the Filling:

Beat the cream cheese and confectioner's sugar together until smooth.

Once The cakes are cool, use a little spatula or cake icing spreader to spread a blop of filling on one cake. You don't want too little, or too much. Then, find a comparable sized cake to put on top to make a completed Whoopie Pie. From my experience, I think these taste better when they are chilled, so you can decide for yourself but when chilled they are more firm and are just DELICIOUS!!!! Another thought.. even though this is tried and true.. You could totally switch up the flavor of cake mixes to create a new flavor (lemon, vanilla, be creative!) Enjoy!!!
