Throw it Down Thursday

I've got so much to share with you so we're going to just go ahead and get started! This should be fun... I don't know about you, but throughout the last couple of months, creativity has had no option other than to make an appearance! :) Whether it be scavenging the pantry for what to make for dinner or planning little get togethers with friends at our homes to actually have genuine human contact. Hello to all my fellow extroverts out there, I've miss you and want to squeeze you all! My friend Sarah and I started off this whole Covid season in Flagstaff, AZ when the news broke and since then we've remained in close contact and I thank God for our friendship, because without them, life would have been so dull, sad and lonely. Anyways, Sarah and I love a fun theme when we host and I just wanted to share with you a couple of thoughts and ideas if you wanted to host a little summer shindig. This was a little get together at Sarah's that I wanted to snap a few pictures of..

I couldn't help but notice her adorable sign and hooks for towels.. I love this idea for outside by the pool or hot tub! Totally screams summer right there and SOO conveinent!

Remember me telling you about the water beads that the kids just love? Well Sarah takes it to a whole new level and puts some in a kiddie pool with some fun scoops and cups for the kids.. They all go bananas over it and ALWAYS adds to the fun!

One of the many reasons I love my sweet friend is she ALWAYS makes it special.. And it always is.. She found this cute piñata for the kids and it was a hit! This is why we have friends people, they inspire us and show us things we'd never think to do! So, totally do this, even if it's not a birthday... Kids LOVE to whack a piñata for candy or trinkets, whatever you choose to fill it with!

Ok, so we've been on this kick of finding new summer drinks.. I'd say we're on a roll actually and have discovered many we're a fan of... I'll collaborate with Sarah and make a post about that one soon! This one that Sarah made for the mamas was so simple and easy but refreshing and delicious! She used frozen pineapple (she just had a small bag from Whole Foods) and the Kim Crawford Sav. Blanc and blended it all together! Soooo easy... I will say that it's not very sweet so if you like it more sweet for your frozen drinks you could totally add a little bit of either peach juice or pineapple juice... Or even just honey or agave depending on your liking.. We were all a big fan though!

It's always so fun when you show up to a friend's house and the little touches are sweet and adorable.. If you know me, I live for those! Get some of Target's glitter cups, some fun themed straws and boom! Done.

Always offer options to your guests... Not everyone may drink or feel like alcohol, so make sure you have some other choices for them...

And one of my most favorite things about hosting (and I know I speak for Sarah too) is to find some cute plates and napkins that go along with what your theme is! I'm a fan of easy clean up when I entertain, so these fit the bill. These scream summertime and if you don't know where to go, friends... Target is your best friend! They always have cute themed plates and napkins in the dollar section and by the birthday party supplies... Oh... and ALWAYS check their holiday/summer section because they usually stock that area super well with all the party things you'll need... That's where I get myself into big trouble..

Finally, make your home cozy and inviting.. As long as I've known Sarah and as long as she's known me, there really has never been a time where we go to each other's home and candles aren't burning.. If you don't like scents, just get the scentless votives and some cute holders... I'm a huge fan of anything smelling wonderful in my home, so I stock up at Home Goods or The Opalhouse Line at Target has tons of delicious options that are soy based and last awhile, burn evenly and just add that extra coziness.

Now... How about a fun summer dessert that you'll fall in love with?!!!! I found this recipe and tweaked it to how I'd make it sooo get your grocery list out and make sure to make this for your family! They'll LOVE you even more for it..

Key Lime S'More's Bars


2 Cups crushed graham crackers

4 TBSP butter, melted

A dash of salt

2 8oz. packages of cream cheese, softened

1/2 Cup powdered sugar

1 7oz. container marshmallow fluff

1 Cup Cool Whip

3 Tbsp. key lime juice & zest (I used 3 key limes)


Preheat the oven to 350 degrees. Mix together the graham crackers, salt and melted butter in the food processor. Press the crust mixture into a 9x9 baking dish that is lightly sprayed with cooking spray. Bake crust for about 8-10 minutes making sure it's not too dark but just golden. In a mixing bowl, beat the cream cheese, powdered sugar and marshmallow cream until smooth. Then you're going to stir in the Cool Whip, followed by the key lime juice and some zest. Pour the cream cheese mixture over the crust. Cover and refrigerate for 3-4 hours before serving so that the cream cheese has time to harden a bit into more of a bar. Add some key lime zest on top or you can even slice up some key limes and lay on whipped cream to display on top for an extra bit of fancy! Enjoy!

On another note, we have a family of quail living in our backyard!!! Every summer, we always find a nest with eggs in it! I love it with my whole heart because those quail must know it's a safe place to lay their eggs and raise their little babies until they can fly... Well, this year, there are 9 BABIES!!! YES 9!!! Moms.. can you even imagine? I mean, at least their children can walk right away and feed themselves, but watching her try to keep them all together just stresses me out.. So.. yesterday the boys were out back and of course find the group and decide they want one as their pet.. Ugh... I know the curiosity well, but please stop stressing that mama out... Well, one fell in our pool so my husband fished him out quickly with the pool net and then that's where I took charge and held that sweet baby.. We dried him off and he was sooo dang cute, just falling asleep in my hand.. After he was dry, we took him back to his family where he ran right back to.. Here's our little baby.. .Can you even deal?

Oh my heart... Quail are seriously some of my fave birds, I just love their little flappy thing on their heads and I LOVE their tiny little babies!

Ok.. So last thing... If we are going to have a dessert made of cream cheese and sugar, we NEED to eat some salad.. Friends, I don't know about you, but I'm INTO making salads just as much as I love cooking up a meal.. There is an art to it, and you must thoughtfully think about what you're putting into it! (Well at least that's how my mind thinks) This salad I'm sharing with you is something I just threw together with things in my pantry awhile ago and now it's my GO TO!

I love it so much and so have those I've served it to.

Lindsey's Rainbow Salad

I ALWAYS use this Primal Kitchen Dressing!!! The Balsamic Vinaigrette made with Avocado Oil is my absolute favorite and there is 1 gr. of sugar! Trust me, try it! You won't have to worry about eating all your calories in a dressing.

I get a 16 oz. box of Organic Spring Mix. If you just like spinach, get spinach, or power greens, whichever you prefer. Or mix a few.. But... here's the important part... I don't know about you, but I'm not a big fan of eating huge leaves... hahaha! So, what I do for all of our salads is use my kitchen shears to cut the leaves up so it's easier to eat.. Plus, I feel like it leaves you with more, even though really, it's still the same amount.

For a large salad, I use 2 Organic Honeycrisp apples.. So make sure to wash them, and then you're going to dice the apples into small cubes.. I like everything to be small and chopped in my salad but if you like bigger pieces or slices, go for it!

Ok.. So I LOVE onion on my salads... Especially red onion... So, I grabbed a big red onion, chopped it in 1/2 and then diced it to match the size of the apples.. Then the fun part begins...

I love adding some extra "yummies" to my salad... So, you'll want to buy fresh dried cranberries, salted sunflower seeds, slivered almonds, and my all time fave on a salad that I found at Sprouts are the Pepitas Tequila Lime Roasted.. YUM!!!!!

First, I lay down the onion and apple... Then I sprinkle some cranberries on top of that and follow with the nuts and seeds... If you have a nut allergy, you can always keep those in a dish on the side for people to help themselves..

Once you've added all of your goodness, you can either add your shredded parmesan or just let everyone add their own... I never pre-dress my salads because everyone is different in what they prefer.. So, I just leave the bottle right there for each person to add as much or as little as they'd like. Voila! Super healthy, SOOOO yummy and if you aren't entertaining, you can make a huge salad like this for a meal or use it for meal prepping!

Finally, we went out to a nice dinner with friends last weekend and LET ME TELL YOU... To get dressed up, put on some wedges and head out, babysitter and all was like a DREAM! It felt amazing to get some time away and not have to cook! Thank the LORD for babysitters that are amazing and restaurants that are just dying for you to come in a dine!
