Crockpot Lentil Soup

Ok, so my Oma (Grandma in German) made all her meals from scratch.. So many of our favorite family recipes come from her and her family! I'm pretty sure that she used to make this soup on the stove, but these days, crockpots have become a go to for busy families!!! That's why I love this soup... It's SO doable, not too many ingredients, healthy and delicious! I have the best memories of my mom making this for us growing up on chilly nights.. So while it's still winter, I figured you could stick this in your "try it" menu for a night and hopefully love it as much as I do! You'll love how simple it is! It's kind of like getting a lot of bang for your buck!

As a sidenote... lentils are low in calories, rich in iron and folate and an excellent source of protein. They pack health-promoting polyphenols and may reduce several heart disease risk factors. In my book, that is a WIN WIN situation!!!!

Here it is:


- 1 bag of lentils (make sure you put in a colander to wash off)

- 2 cans of chicken broth

- 3 cans of water

- 1 1/2 cup chopped onion

- Slice carrots (maybe 2 cups)

- Diced celery (maybe about 2 cups)

- 1 package of smoked sausage

- Salt and pepper to taste

- 2 bay leaves

Add everything together into the crockpot, stir occasionally and simmer on low for 6-8 hours! Dinner is done before you even leave the house... The flavor of the smoked sausage is just heavenly!
